The Ever Changing Macro Bowl

Macro bowls have become a new obsession in our house. It’s one of the easiest ways to meal prep and eat clean on a budget, not to mention it takes about 2 minutes to assemble! Just follow the basic formula; 20% grain/starch + 60% veggies + 20% protein. That simple. You can customize your bowl however you like and feel free to add extra toppings including avocado, nuts, sauces, sprouts, eggs, seeds, etc.

We like to roast a variety of veggies at the beginning of the week and store them in glass jars. That way when we need to make a bowl we just pick our protein and assemble. Hubby has been eating Paleo lately and has been topping his with organic chicken or steak and an egg. I love mine either topped with roasted chickpeas or some wild caught salmon and avocado. And we always have some tahini sauce on hand to drizzle on top! I’ve included the recipe below!

 

Tahini Sauce:

  • 1/2 cup tahini I order mine here
  • 1/2 tsp. garlic powder
  • 1 lemon juiced
  • 1/4 cup water

Mix all ingredients in a bowl and whisk until smooth.
